Taco Salad

I have been eating this recipe on REPEAT last week and definitely carrying the tradition into this week. If you're anything like me, I'm NOT good at getting enough of my greens into a day. I actually NEVER eat vegetables growing up. Like EVER. I know, I know, SO BAD. But honestly, we were a meat and potato kinda family with a iceberg lettuce salad LOADED with Ranch Dressing. Just the way I was raised. But then I went to college, and post-college started seeing my body change in a not so positive way. I realized there was so much more to being healthy and fit than looking skinny. So here I am, 27 and FINALLY learning to eat vegetables!! But it's still not easy!

Anyway, I just kinda threw this salad together the other day because I was starving and didn't have anything else in the fridge so thought it would be a good match! And woooowheeee- LOVED IT!! I hit a winner! Which has been repeated numerous times. And not to mention, it saves you record time making it and it totally fits in my brand new Core De Force meal plan! (Which you can find out more details by filling this out)

So here is what you will need:

-Salad (I don't know what kind I have in this pic because I live in Argentina- everything is in Spanish and I'm still learning hehe- but if I were home- I would try some sort of spinach or dark greens mix!)
-Mince or what I call Hamburger Meat (try to get the leanest kind available)
-1 Red Bell Pepper
-1 Tomato
-1 Red Onion
-1 Avocado
-1 cucumber
-1 can of salsa (I prefer mild-but go spicy baby if you can ;)


1. Brown the Meat
2. Drain excess liquid from the pan and meat.
3. Toss on Salsa mix and stir over medium heat just a few minutes more.
4. Turn off stove (HUGE DONT MISS THIS- I do it all the time and it drives my husband insane haha)
5. Wash and cut up all the lettuce (unless it's pre-washed yay for America!!), and veggies! I used about 1/2 the tomato and cucumber then the onion use to your preference. Really all the veggies can be subbed in or out according to your tastes.
6. ASSEMBLE! I pile on the lettuce, the veggies and finalize with the meat!
7. You can add a drizzle of ranch or whatever you want- I personally feel the salsa in the meat is sufficient!
8. DEVOUR!!!
