Creamy Tuna Pasta with Broccoli

Wednesday, 29 June 2016

So Superman Luhhhhoooovessss his pasta. He's an athlete so I guess it comes with the territory of burning a lot of calories ;) Nonetheless, I've been on the hunt for some awesome, simple pasta recipes that still keep it healthy!

Finally, I came across THE BEST recipe! Seriously I made it like 3 days in a row when I first heard about it. My friend, Marissa, (also a basketball wife- THANK YOU MARISSA!) gave it to me! It's one of her go-tos and once you try it, you'll see why it became one of mine as well!!! I've jazzed it up a bit to fit our style by adding in some veggies and I throw in more tuna than the suggestion below as well as a bit of parmesan cheese for an extra creaminess!

Creamy Tuna Pasta with Broccoli:

Needed:
500 g of Whole Wheat Pasta (or pasta of choice)
2 cans of Tuna in Olive Oil (about 160-210 g of Tuna)
400 g of  greek yogurt (about 1.5 cups)
Juice of 1 Lemon
2 Teaspoons of Garlic Powder
3 Tablespoons Fresh Parsley, or 3 Teaspoons Dried
Salt and Peper

Directions:
Boil the pasta, then while the pasta is boiling combine the rest of the ingredients and simmer + stir. When the pasta is finished, add the sauce.
Then EAT!!

Hope you enjoy!

Courtney
