Sweet Saturday: Recipe feature Dashing Dish's Protein Packed Oatmeal Chocolate Chip Cookies

Okay okay okay okay.... let's all just take a deep breath before we INHALE this life-changing recipe.

YES. It's THAT good.

Katie is someone I've been following probably since day 1 of her blog! She has an incredible heart for the Lord, and her ministry with food + fitness has been an instrumental role in my own healing with health.

So there is NO one better to bring us our Sweet Saturday Recipe this week!!

Drum roll pleaseeeeee.......

You will need:

2 cups of Oats
1/4 cup Protein powder (I sub in either Chocolate Shakeology (which you can find here) or Choc. Coconut Protein Powder)
1 tsp Baking soda
1/4 tsp Salt
6 tbs Coconut oil (melted)
1 tsp Vanilla extract
1 Egg
1/2 cup Baking stevia OR 1 cup sweetener of choice that measures like sugar
1/4 cup dark chocolate chips

How you make these little pieces of heaven:

1. Preheat oven to 350 degrees ( I did 100 degrees Celsius). Line a cookie sheet with foil or parchment paper, and spray with non-stick cooking spray. Place 1/2 of the oats (1 cup) in a food processor, and grind until oats are ground into a flour. Then place the next 1/2 of the oats (1 cup) in the food processor, and grind until oats are ground into flour. 

2. Mix in the rest of the dry ingredients.

3. In a separate bowl, melt the coconut oil. Add in egg, vanilla, and stevia and whisk together.

4. Mix the wet ingredients with the dry, and stir until combined. Add in chocolate chips.

5. Roll cookies into balls and place on the cookie sheet.

Note from Katie of Dashing Dish: Bake cookies for 8-10 minutes, or until cookies are set and firm and only lightly colored. Store in an airtight container. Cookies may be wrapped and frozen. Weight watcher points and calories/macros can be found on her original recipe post. 

See!! Life changed! 

I tell all y'all that I'm a serious cookie lover- like NO joke- I'm OBSESSED with choc chip cookies. Katie's recipe was the FIRST one I found that was a healthier alternative! The beauty here is that we don't need to cut out our favorite foods- we just need to find the better options and stick to a balanced intake of those. I ate 2 of these cookies today and didn't fall off track with my own nutrition guide! It's all about moderation, and peace with your own journey!
