I love Saturdays...

...lazy mornings...
...cuddling until late noon...

there is something simply rejuvenating about a schedule-less day. a day where you can be swayed in the moment to go and see and explore and adventure with the flip of your will.

a day of rest, joy, and a few of your favorite things.

saturday is synonymous with baking for us. or at least for me... ;)

since i entered this world, i've ben a cookie fiend. i love cookies. lotsa and lotsa cookies.

it don't matter, either one makes me cave.

they are my kryptonite; the area i'm weakest.
the sad truth: everyone close to me like really KNOWS this about me. embarrassing or refreshingly authentic? hmm...

well, seeing as that i'm on this health kick to live my healthiest life and especially now that i'm a fitness coach, cookies have been few and far between. mostly because i SERIOUSLY lack any type of self-control. but recently, i've decided the world is a better place with a cookie (or two) in hand.

so here begins a life-long quest... to recipe-taste delicious "cleaned up" versions of cookies. my taste, is your good fortune.

this week, we have a cookie from @rachlmansfield (originally recipe found here)... and get this... it's just THREE ingredients. wow. she is a superhero.

1 cup of creamy peanut butter (at room temp, not from fridge)
1 egg
1 cup of Better Body Foods coconut sugar (or for me, just any coconut sugar i could find)

1. Preheat your oven to 325 degrees & line cookie sheet with parchment paper and spray well
2. Mix all ingredients together well
3. Using a tablespoon & your hand, place balls of dough on top of cookie sheet
4. Using a fork, press down on the ball so it flattens slightly
5. Bake in oven for 10-12 minutes or until ready

game changer.
