YUMMY Enchiladas



Since getting married, dinner has been a S-T-R-U-G-G-L-E for me. Any other new wives out there have a mother-in-law whose cooking is on point- like always?? I do! Her cooking is amazing, and therefore, I have a husband who is accustomed to REAL good meals. You can see how intimidating this can be for a brand new wife. What is a new wife who's trying to impress her Superman to do?!

For the first few months of marriage, I let fear rob me of trying to find my own stride with cooking. Because let's be honest... all those rockstar moms who kill the kitchen scene started at the beginning too ;)

So here I am- at the beginning of my cooking journey... choosing to overcome my fears. Recognizing that I too can be that amazing cook, but like most things...I have to be willing to try! My goal as a wife cooking dinner (or any meal) is to:
1. Cook cleaner recipes
2. Make enough food to satisfy my pro athlete Superman
3. Keep it affordable
4. Become a cook that my Superman brags about

Tonight, I took a BIG step in the right direction or pursuing this :) by buckling down and creating my own spin of Enchiladas. In my opinion, it TOTALLY rocked! Plus it was SO easy! Check out my recipe below!

5 Ingredient Enchilada Recipe (makes 4 Enchiladas)

Ingredients:
4 Corn Tortillas
1 package of minced meat (chicken, pork, or beef)
1/4 cup diced onion
1 Can of Enchilada Sauce (or in my case Poco Loco Burrito Cooking Sauce)
1 package of Mozzarella Cheese


Directions:
1. Brown the diced onion then add the minced meat and brown it with the onion.
2. Add the Burrito or Enchilada sauce to the meat pan, let simmer for 1-2 minutes.
3. Foil deep dish pan.
4. Lay out 1 corn tortilla and fill with sprinkle of cheese down the middle/center.
5. Add the meat + sauce on top of the cheese.
6. Roll the tortilla and tuck the two folded sides underneath like a rolled sushi ;)
7. Repeat steps 4-6 for the other 3 enchiladas.
8. Pour additional sauce on top of all 4 tortillas.
9. Sprinkle cheese on top of the enchiladas.
10. Stick into the oven and let cook until the cheese on top is very lightly browned.
11. Pull out and ENJOY!

Containers (21 Day Fix):

1 Red Container: Mince Meat
1.5 Yellow Container: Corn Tortillas + bean in burrito sauce
1 Green Container: Enchilada Sauce
1 Blue Container: shredded cheese

  1. I may not have fear of failure in the kitchen, but I TOTALLY have been limited in life because of a legitimate general fear of failure. I HATE looking like a fool and have always avoided things I'm not good at. My goals are always to keep trying and follow through :)
